"Bob" Zabbia, MAYOR Please publish: Febraary 6, 2013 Time to plant spinach, other above-grounds The 10th of Feb. is the new moon progressing to the full moon and time for planting above-the-ground crops. One of my favorites is spin- ach. Often referred to as "packed with iron," spinach is more loaded with vitamin A and C, potassium, thiamin and fo- lic acid (a vitamin B complex). Spinach also contains carote- noids lutein and zeaxathin, and it is generally just plain tasty and good for you. The two types being, smooth leaf, or Savoy with darker crin- kled leaves. The Savoy is harder to clean so I like the smooth leaf better for home use. The popular "baby spinach" is not immature, but a variety that simply grows small leaves 0nly. Work soil into a small row and mix fireplace ash or potash with a little commercial fertiliz- er, 8-8-8 or less. Water until wet all the way down and let ground set until the new moon. I plant six inches apart, twice as deep as the seeds are long, and in 4-6 weeks you are harvesting an endless supply of fresh spinach. If you cut the outer leaves off and don't pull the plant, they will produce un- til the weather gets too hot. At this point the plants go to seeding. Take the abundant leaves and stuff into a sealable freez- er bag, pushing the air out, and microwave for 60 sec- onds, let cool and store in freezer for up to six months.
